recipe: 10 ingredients, 5 lunches

Trying to pack daily-healthy-lunches in an effort to save money for a new spring wardrobe can be a challenge. which is why I’ve taken the liberty to put together 5 lunch suggestions that only require 10 ingredients (shoe budget!)

Not sure about you but when spring rolls around and the layers are peeled back I feel like I need to get my body in check and wardrobe up to speed. This means hours at the gym and budget friendly healthy meals

how to afford all the spring trends…pack a lunch

White bean, arugula, avocado and tuna salad

Directions:
Rinse and drain canned white beans and transfer to a medium bowl. Add olive oil, red onion 1 T lime juice and half of the fresh herbs. Season with salt and pepper. Allow this mixture to marinate for 1-2 hours. Just before serving, slice avocado into 1 inch pieces, ¼ inch thick and sprinkle remaining lime juice on them. Mix all ingredients together gently, top with remaining herbs. Place the white bean and avocado over a bed of the fresh Arugula and serve.
Ingredients
15 oz white beans, drained and rinsed
1 T olive oil
¼ C red onion, chopped
1-1/2 T lime juice
1 T fresh cilantro, chopped
1 T fresh Italian parsley, chopped
1-2 organic avocados, sliced
1 bag fresh Arugula (mesculin mix will also work)

Chicken, black beans, avocado over brown rice
8 ounces grilled chicken breast, sliced
1 1/3 cups cooked brown rice
# 1/2 avocado, pitted and diced
# 1 Roma tomato, seeded and chopped (1/2 cup)
1 1/3 cups low-sodium black beans, drained and rinsed

Grill chicken and cook rice the night before, pack each ingredient in a separate container. Combine when ready for lunch.

Tomato soup and pita grilled cheese w/ tomatoes
1 can tomato soup

Pack a can of tomato soup, 1 tomatoe, a piece of pita and cheese

Chicken or tuna salad sandwich in pita with tomatoes, arugula and avocado

Mexican pizza on pita with black beans, cheese, avocado, tomatoes and chicken
Place 8 ounces of grilled chicken on a open faced pita, cover with black beans, cheese, avocado and tomatoes, toast.
