Affogato’s and Baileys Original Irish Cream are two of my favorite things so I decided to combine the two by making Baileys Irish Cream Affogato’s. Mmmhmm, that’s right. Homemade Baileys Irish Cream ice cream topped with rich deep espresso. It’s just as good as you’d imagine. Here’s how to make it:
You will need:
14 ounces of coconut cream
3/4 cup Baileys Irish Cream
Shots of good Espresso
Garnish options: chocolate covered coffee bean, grated chocolate, coconut flakes, fresh mint
1. In a bowl, whisk together coconut cream and Baileys Irish Cream. Cover and completely chill.
2. Run mixture through an ice cream maker and freeze until firm if necessary.
3. Scoop Coconut and Baileys ice cream into a glass and pour rich espresso on top. Garnish with chocolate covered coffee beans and fresh mint – serve immediately!
