On a Sunday morning while eating brunch, I was carefully crafting the perfect granola/berries/almond milk bites onto my spoon and wondered – “What if the almond milk was strawberry flavored?!”

 I jumped up, sliced a few strawberries, grabbed almond milk, and blended the two together. It was good but could have been better. I sliced a few more strawberries and tossed them into a pot with a little bit of sugar and water, then cooked the berries down into syrupy goodness. Once cooled and macerated, I blended the syrup and almond milk together and BINGO! This was what I was going for.

It’s sweet and creamy, and as my husband says, it “tastes like the best part of the cereal bowl: the sugary bottom part.” Here’s how to make it a little more specifically:

Strawberry Almond Milk

You will need:
1.5-2 cups almond milk (homemade or store bought)
4-6 strawberries (depends on how big and sweet they are)
2 tbsp sugar
1/4 cup water

Make:
1. Wash strawberries and remove stems; cut into quarters.
2. Toss strawberries, sugar and water in a pot on medium heat. Cook down until soft – 5-7 minutes. Macerate and let cool.
3. Add strawberries and almond milk to a high speed blender, blend until smooth.
