weekend recipe: coconut pancakes

In honor of the release of PANCAKES, a delicious 72 recipe book penned by my friend Adrianna from A Cozy Kitchen, we teamed up to bring a handful of her mouth watering recipes to life in LEAF video form.

First up: coconut pancakes. 

The best pancakes I’ve ever bitten into. So good and…cozy!

Recipe: COCONUT PANCAKES

You’ll Need:
– 1 cup all-purpose flour
– 1 tbsp sugar
– 1 tbsp baking powder
– ¼ tsp salt
– ¾ cup canned coconut milk
– ¼ cup cream of coconut
– 1 egg
– 1 tbsp butter, melted + cooled
– ½ cup coconut flakes

1. Mix flour, sugar, baking powder and salt in a bowl
2. Separately, combine coconut milk, cream of coconut, egg and melted butter, beat together
3. Combine wet with dry
4. Fold in the coconut flakes
5. Preheat skillet with 1 ½ tsp butter, onto warm skillet scoop ½ cup batter (with spatula, shape pancake)
6. Cook for 2-3 minutes (until bubbles form) & flip!
7. Top with butter, drizzle heated maple syrup and sprinkle more coconut flakes
8. ENJOY!

hair inspo: the demi crown braid

If you’re in a hair rut why not try out this ‘do ‘do ‘do?

How-to:
1. Section off small piece of hair near the temple and french braid for 2-3 inches
2. Continue with a regular braid for another 2-3 inches
3. Holding the middle section firm, push braid up and fasten with a bobby pin

4. Create another section, same size, right below and repeat braid
5. Repeat 1-4 on other side of head
6.  Tousle hair
7. Gently mess the crown of head

diy: embellished sunnies 3 ways

Take some notes from the Spring 13 runways and add some OOMPH to your basic sunglass by embellishing and beading — just have fun & get creative!

You will need:
 Sunglasses
 Embellishments (beads & gems can be found at local craft stores)
 E-6000 glue

1. GO BOLD – add pearls to the top of black cat eye shades
2. GO SIMPLE – add one cool bead/gem to the the center of round 70’s sunnies
3. GO PATTERNED – create a fun pattern with rhinestones on retro ray-bans
