recipe: roasted garlic

There are those rainy days when you can’t seem to get a break: you have a huge meeting and traffic is a disaster, the broken windshield wiper you’ve been meaning to fix is pretty much useless, you finally arrive without an umbrella which means frizzy hair, a soaked trench, mascara running down your cheeks and ice cold drenched feet (so much for waterproof boots!).

And then there are those rainy days you live for: nothing on the agenda but watching the rain glide down your windows, you find classical music in the pitter patter, movie after movie on the couch under warm blankets, tea, delicious comfort food and a nap (or two).

It was raining cats and dogs in LA this weekend and I wanted nothing more but a rainy day I live for. Hours were spent catching up on tivo, books, magazines and of course, my favorite blogs. Somewhere between ‘The Fighter’ and ‘Lucky Mag’ I came across a roasted garlic recipe and within moments I had garlic baking in the oven.

Simple and delicious; I can’t believe I’ve never done this before.

How to: Roasted Garlic

You will need:
large heads of garlic
1/4 cup olive oil


1. Preheat oven to 400°F.

2. Chop off the top quarter of the head of garlic (the pointy side) and place on a square of aluminum foil.

3. Pour olive oil over the fresh cut side, enough to cover. Fold the foil over the head to completely enclose it.

4. Bake for 30-35 minutes in an oven safe dish until garlic skins are golden brown and cloves are tender (you will know when it’s ready if the garlic is soft inside when you insert a knife). Let cool. Squeeze garlic cloves from skins. You can use the garlic for pasta sauce, salad dressing, etc. or simply serve with warm fresh bread and olive oil (my personal fave.).

    i am craving a rainy day where i can just stay in a do everything that i want to do! which, is basically as you stated…
    (movies, books, mags, blogs, food, naps, repeat)

    As someone who lives in basically the rainiest place ever, I always find it so funny how people view rainy days. Imagine if every day were a rainy day – that’s my life! lol

  4. I tried roasted garlic at a restaurant last year. They gave it to us with our bread instead of butter. It is honestly so soft and buttery LIKE butter. It is amazing! I always wanted to look up a recipe but completely forgot about it. Thank you so much for reminding me. I just printed yours. Will be making them very soon!
