I cannot tell you how many times I’ve regurgitated those four words at M Cafe.
In spite of my friend Tali’s opinion, “That shit is overpriced rabbit food,” I love my M. It’s light and healthy which leaves me food-coma-less for those remaining and often painful six to ten hours of work. The veggie burger is so good that it may just persuade Guy Fieri to pull out of all those Drive-ins, and the sushi isn’t bad either. It is macrobiotic, the bathrooms are clean, outfit inspiration is high and there is a guaranteed celeb spotting (take that as a pro or con as you wish).
Even with all that M has to offer, Tali has a point: it is in fact overpriced.
I made fives times the amount of red quinoa for the price of one large M side. FIVE TIMES THE AMOUNT! AND I had bragging rights!
Now making quinoa is totally my new thing. It is a nutritious, trainer approved grain that is the perfect side dish to compliment any protein. And with a little imagination and pantry surfing you can make countless variations. I’m thinking nuts and cranberries for my next batch.
The best part: it cooks itself in a rice cooker.
How to: Quinoa
You will need:
1 cup Quinoa (I used red quinoa)
2 cups kitchen basics vegetable stock or water
1/3 cup red pepper, small dice
1/3 cup yellow pepper, small dice
1/3 cup green pepper, small dice
1 small vidalia onion, small dice
Instructions after the jump…
1. Sauté and caramelize onion in 1 Tablespoon olive oil.
2. Add all ingredients to rice cooker ( I saved time by buying pre-cut peppers).
3. Allow to cycle in your rice cooker (it will turn off when it’s done, like magic!. Salt and pepper to taste. Serve hot or at room temperature.

My people were the original lovers of quinoa and I’m so happy people have got into this amazing dish. You can do soooo much with it!
as a vegetarian i’m completely obsessed with quinoa! the red is my favorite. it’s perfect in a cooled salad for summer, or as a healthier option with a coconut curry.
and yes so easy to make – easier than rice ! i don’t even use a rice cooker just a big pot.

I’ve never eaten quinoa, but i’d like to do it 🙂

I love M Cafe, but usually leave hungry. Or in order to be full I have to spend $25. Ugh. This is a great, simple quinoa recipe. I’ve recently gotten into making baked goods with quinoa flour–pretty amazing.

Have never try it ! So I’m gonna do this recipe and it’s gonna be a good pretext for inviting my friends too 😉
