When we got back from our gluttonous 4th of July trip we vowed to eat healthy. And since we made these vows while it was still technically the holiday weekend we figured why not start…tomorrow?
HOW TO: Fresh Warm Cherries with Vanilla Ice Cream
You will need:
1.5 cups of fresh sweet cherries, pitted
Approximately 1.5 tablespoons of sugar
1 tablespoons of water
1/2 of a vanilla bean
Premium vanilla ice cream
*Serves 2
1. Combine cherries, sugar and water in a medium saucepan. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and bean to the pan. Cook on moderate heat for about 2 minutes until the cherries release their juices.
2. Uncover and cook over high heat for another 2 minutes or until the cherries are tender. Discard the vanilla bean and let cool.
3. Spoon cherries and cherry juice over premium vanilla ice cream (and for those with a serious sweet tooth top it off with caramel or chocolate or dare I say…both).
Enjoy!

That looks absolutely amazing! Although fresh cherries are difficult to find here, I think I might make this with frozen. It won't be anywhere near as good as these look. MMMM.
