recipe: green beans amandine

Consume more veggies (likely). Drink less coffee (not a chance). Try one of those dreadful cleanses (I’ll last a day). Avoid the bread basket (ughh). Limit the 3 a.m. IN-N-OUT adventures (double ughhhhhhhh).

Whatever your decided food-related-new-years-resolutions, if any at all, I’d be damned if this recipe doesn’t fit within the parameters. Nut allergies excluded. Boooooooya.

How to: Green Beans Amandine

You will need:
1 lb. fresh green beans, trimmed
1 Tbsp. butter
2 Tbsp. olive oil
2 cloves garlic, minced
1/4 cup sliced almonds, toasted if desired
1 tsp. lemon juice
1/4 tsp. salt
1/8 tsp. white pepper

1. Trim beans and rinse.

2. In a saucepan, place green beans in cold water, cover and bring to a boil.

3. Reduce heat and simmer for 8-10 minutes until crisp tender. Drain well and set beans aside.

4. Melt butter and olive oil in saucepan and add garlic and almonds. Cook, stirring constantly, until almonds begin to brown.

5. Add beans along with lemon juice, salt, and pepper and toss gently to coat.

NOTE: You can use frozen green beans; cook them according to package directions, then drain. Melt butter, add garlic and almonds, and continue with the recipe.

Serves 6
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

  4. One of the things I hope to do this year is bake at least one cake per month haha, not your typical resolution … but this looks so good, I’ll try it for sure (without the almonds). Yumm!
