Recipe: Arugula Baked Eggs
(This makes 2 servings)

You will need:
- Arugula
– 2 tbsp roma tomatoes, chopped
– Olive oil
– Garlic salt
– 2 eggs
– Shredded mozzarella
– Grated parmesan cheese
– Pinch of shredded mozzarella
– Top with grated parmesan

1. Preheat oven to 400 and butter 2 ramekins.
2. In a small bowl, combine arugula, chopped tomatoes tomatoes, olive oil and garlic salt to taste.
3. Add a large spoonful of the salad mixture, one egg, pinch of mozzarella & top with parmesan and S + P to ramekin.
4. Bake for 8-10 mins.

Really good and satisfying. Instead of garlic salt, I grated fresh garlic into the salad mixture. Makes a really big difference once it is cooked.
