This recipe is the celebration of health: tons of veggies stuffed into an avocado. It’s a great afternoon snack to bring to school or work, but more specifically, a great beach food option! (Warning: The ginger and jalapeño definitely give this recipe a spicy kick!). Jessica of Mint Clothing Company (and surfer babe) shares how to make it:
Ingredients:
– 1/2 daikon, chopped
– 1 carrot, chopped
– 1 celery stalk, chopped
– 1/2 jalapeño, chopped (depending how spicy you like it!)
– 1/2 inch ginger
– 1 garlic clove
– 1 tsp soy sauce
– 1 tbsp Asian pear juice
– Avocados
Instructions:
1. Blend all ingredients (minus avocado) in food processor until texture is consistent
2. Cut & pit your avocado
3. Scoop mixture into the middle
4. Optional: top with sea salt, and ENJOY!

Thanks for a great recipe! I like to put a table spoon of hummus on top of avocados (cut in two halves). It is a healthy and delicious snack!
