This recipe is the ultimate side-dish all year long but especially for Thanksgiving. These smashed potatoes are crispy, seasoned perfectl and really really addicting. Here’s how you make them:
Ingredients:
– 1 lb creamer potatoes
– Olive oil
– Parsley
– S + P
Instructions:
1. Fill pot with salt water (enough for potatoes to be covered), and add potatoes
2. Bring to a boil and simmer until fork-tender (about 20 minutes)
3. Drain and let potatoes cool
4. Arrange on a baking sheet, then smash each potato with the back of a measuring cup (be careful not to smash too hard)
5. Drizzle with olive oil, salt and pepper
6. Roast potatoes for 25-30 minutes (until crispy and golden) at 450 F
7. Turn potatoes halfway through
8. Sprinkle with chopped parsley

these look soooooo yummy! However I’ve made the mistake of looking at them when I’m feeling hungry, oops….I stick to a particular eating plan most of the time so im going to play with your recipe and adapt it to that at the weekend
I got this recipe from The Pioneer Woman years ago and make it regularly. Except I use dill instead of parsley.

I made this tonight. Thank you so much for giving me what may be my go-to potato recipe forever and ever. I only used 1 tbsp olive oil for 7 medium potatoes, yet they turned out soft inside and crispy outside. A complete win!
