This bright pink beet hummus is not only gorgeous but it is absolutely fantastic!
My girlfriend Jaclyn served it at her house the other day and I immediately asked for the recipe. Here’s how to make it:
p.s. how gorgeous is the crudités platter?
You will need:
4 medium beets, cooked, peeled, and cubed
2 Tbsp sesame tahini (found near peanut butter at most health food stores)
5 Tbsp lemon juice
1 small clove garlic, chopped
1 tsp ground cumin
1 large pinch sea salt
fresh ground pepper to taste
How-to:
1. Combine all ingredients into a food processor or blender and pulse until smooth.
2. Serve immediately, or store in the refrigerator in an air-tight container for up to 3 days.
