I vividly remember those middle school Saturday night sleepovers at my best friend Jessica’s house. We’d watch movies like Home Alone, Adventures In Babysitting and Troop Beverly Hills, make up dramatic plays or dance routines which her parents recorded on their video camera (ohhh I wish we still had those tapes!) and always, always, always made rice crispy treats. I can still recall the gooey-ness on my fingers from the marshmallows.
Fast-forward to many years later where I’m a little more concerned with what I put into my body, but still LOVE a good crispy treat. This is where these Love & Lemons Organic Almond Butter & Brown Rice Treats come into play. Not only are they made with brown rice cereal, almonds and coconut, but they contain hemp seeds…so technically that makes them healthy, right?
I’ve made these a good five times and they’re excellent every time! Plus, once you have all the ingredients, they keep for quite some time, making this an easy dessert to whip up last minute. They’re also perfect for Valentine’s Day parties/treats.
To make them yourself, get the recipe HERE. Please note that I upped the brown rice syrup to 1/2-3/4 cups and the chocolate chips to a full cup.

I’ve always wanted to make rice crispies myself! Love how the recipe uses almond butter!
