Depending on your dietary restrictions, this recipe is either one big eye roll or one big “HELLLL YES!!” Regardless, they’re the bomb, I swear.
The recipe comes from CocoBakes who is known for her gluten free, vegan desserts (which I can’t get enough of) and it was so much fun having her in my kitchen to whip up her goodness. As someone who is gluten-lite (free feels impossible) I was eager to bite into her waffles and was shocked about how delicious they were. And not just that, they genuinely taste buttermilk-y which is from the secret ingredient: apple cider vinegar (I did not see that one coming!).
I realize there are a lot of ingredients, but for what it’s worth, I’ve made these three times since the shoot a couple of weeks ago. That’s how good they are! Here’s how to make them:
Gluten & Dairy Free Buttermilk Waffles
Grab:
1/2 cup cassava flour
1/4 cup brown rice flour
1/4 cup tapioca flour
1/4 cup buckwheat flour
3/4 teaspoon baking soda
2 teaspoons maple sugar
1/2 teaspoon himalayan salt
1/3 coconut oil
1 egg
2/3 cup almond milk
1/4 cup apple cider vinegar
Make:
1. HEAT – your waffle maker
2. MELT – the coconut oil over the stove
3. WHISK – together the flours, baking soda, salt and maple sugar
4. ADD – the liquids and egg, then mix to combine
5. SCOOP – the batter into the waffle maker
6. COOK – until ready, ENJOY!
