3 Recipes To Add To Your Lineup


During pregnancy, I spent A LOT of time in the kitchen which gave me the chance to test out all sorts of recipes that I’ve found scattered across the internet. Some have been good, some so-so (it’s always such a bummer when you spend the time making something that’s just fair), and others were SO good that they’re now regular dishes in our house. Here are three “Geri tested and Darin approved” recipes that I can’t get enough of (Valentine’s Day meal, anyone?):

1. GOOP’s Slow Roasted Mustard-y Salmon

This is a crowd pleaser! Literally. It serves 8-10 people and given the amount of food it makes, it couldn’t be simpler. It’s 10 ingredients, takes about 40 minutes (10 minutes prep, 30 minutes cooking time) and delivers a tender, herbaceous mustard salmon dish that’s really good. Every person that I’ve made this for has requested the recipe – that’s how yummy it is!

2. 1-Pot Red Lentil Chili

I love making big pots of soups and curries during the winter, but hadn’t found a chili recipe that I absolutely loved until I tried this one. It’s a smoky, flavorful, protein- and fiber-rich plant-based meal perfect for cold nights, and if you’re not feeding a crowd, makes for great leftovers all week long. After making the recipe as suggested, I found that it was a little too spicy for our household, so I cut down the jalapeno and upped the maple syrup the second, third, and fourth time. Not joking about making this over and over again.

3. Salted Chocolate Tart

I don’t make desserts often, but couldn’t resist giving this one a go and I’m so glad I did! It’s grain-free, low in sugar, and high in healthy fats, fiber, antioxidants and deliciousness!
